Kalamay Ube Recipe
2 packs frozen ube
1 field mochiko (sweet rice flour)
4 cups white sugar
2 cans coconut milk
1 tsp vanilla
banana leaves
latik (cook coconut milk gradually until all oil is extracted and latik is created)
How to make ube kalamay
Thaw ube that is frozen. Make latik. Wilt each banana leaf then clean with coconut oil.
In large wok, mix thawed ube with coconut milk, mochiko, sugar, vanilla and a small coconut oil.
Stir while cooking. (place more oil that is coconut tablespoonfuls if required to prevent sticking.)
Keep stirring until mixture is very thick. Place in pan lined with wilted banana leaves.
Flatten batter by hand employing a piece of oiled banana leaf.
If you don’t feel just like stirring for a long time, you`ll place somewhat thickened mixture in baking pan and bake in 350°F oven 15 to 20 mins.
Cool and score prepared ube in diagonal shapes and put latik on top.
Pour coconut cream in a nonstick skillet over medium low heat. Leave it is for about 25 mins. It will boil, keep it alone. Once the edges are browning, give it a stir. Turn the warmth reduced. Leave it alone once more. Whenever most of its brown, turn the heat off and let recurring heat cook brown the coconut solids. It will brown very fast by the end. Must be a light brown color (I burned mine only a little).

Ingredients
1 Pack 16 oz grated Ube
2 Cup Sweet Rice Flour
1 1/2 Can of Coconut Milk
1 3/4 Cup sugar
Drops of Food Coloring
1 Tsp vanilla (optional)
Banana leaves
Oil from Curd
2 Cans of Coconut Milk for Curd
Directions
In a big Pan or Wok, Combine the Coconut Milk, glucose, Sweet rice flour and Grated Ube (Purple Yam) and mix well until well combined.
Cook on Low temperature and keep stirring before the mixture gets thick.
Place some coconut oil when stirring to prevent sticking.
Transfer the mixture that is cooked in a pan lined with wilted Banana leaves.
Flatten through the use of an metal that is oiled and top with coconut curd.
Serve.
To Organize Curd:
Prepare the Curd by pouring the coconut milk as a pan and let boil until it curdles.
To Serve:
Refrigerate the Ube Kalamay then Slice into square or shapes that are diagonal
